Many variables can affect how complex you can make your document before the document slows down. Here are some tips.
- Linking rather than embed to images
- Will you have many fonts, might be better to outline if you will not need editablity
- Try to not use any bitmapped effects
- Clear all your palettes of unused colors, symbols, brushes, graphic style
If during a this project you notice a slowdown, you may want to then got to plan B and for example make 10 documents of 10 art boards.
Since you mentioned icons that is a great sign you will not have much trouble as I expect you won't have any images, bitmapped effects or even fonts.
Finding an icon amongst 100 pages can be time consuming. If you can organize them by topic that would help, and you can look into creating symbol libraries instead.
